I would do the NY Times crossword every Sunday, just to relax.

Fun article in the New York Times today: The Expense of Eating With Celiac Disease.

And it pointed me to two other blogs, yay, Gluten Free on a Shoestring and Celiac Chicks.

  1. New recipe that cost me nothing:

    1. Chicken, cubed and cooked. Enough for two meals. (Already had the cooked chicken in the freezer)
    2. Green Peppers, diced, about a cup (got these from Mom's garden)
    3. Salsa (was in the fridge)
    4. Cheese (grated Mexican cheese was in the fridge or you can use Parmesan)
    5. Pasta, about a cup (already had this, and for you, it would be gluten free)
    6. Tomatoes, diced (got these from Mom's garden)

    Cook the pasta, divide into two bowls, one for now, one for later. Put salsa on pasta, enough to cover. I went light on the salsa because I wasn't sure how overwhelming it is... but I could have gone heavier. Then dump in the green peppers, tomatos and chicken. Sprinkle on cheese. Enjoy.

    Result: Two meals
