1. Chicken, cubed and cooked. Enough for two meals. (Already had the cooked chicken in the freezer) 2. Green Peppers, diced, about a cup (got these from Mom's garden) 3. Salsa (was in the fridge) 4. Cheese (grated Mexican cheese was in the fridge or you can use Parmesan) 5. Pasta, about a cup (already had this, and for you, it would be gluten free) 6. Tomatoes, diced (got these from Mom's garden)
Cook the pasta, divide into two bowls, one for now, one for later. Put salsa on pasta, enough to cover. I went light on the salsa because I wasn't sure how overwhelming it is... but I could have gone heavier. Then dump in the green peppers, tomatos and chicken. Sprinkle on cheese. Enjoy.
