Menu Plan

Last week (the one right after Thanksgiving) I did not do a good job of planning. I had some unexpected meetings at work, and so all my planning time was taken up. It made it a harder week.

So for this week, I sat down and planned really well. I made a list of what I would eat on each day for breakfast, lunch, dinner, and snacks. Then I made a shopping list based on all of that. Then I realized there were only 12 days until I get to go home for Christmas, so I bought enough food for 3 rotations (it's a four day rotation).

Here's the plan:

Day 1
Breakfast: soymilk. banana.
Lunch: black eyed peas w/ rosemary. carrots
Dinner: cod. or tofu and sardines
Snack: pistachios. carrots. banana.

Day 2
Breakfast: millet with cranberries
Lunch: brussels sprouts
Dinner: lentils. tuna steak.
Snack: hazelnuts. apple. cucumber

Day 3
Breakfast: lima beans
Lunch: sweet potato
Dinner: buckwheat pasta and tomato sauce
Snack: brazil nuts. kiwi

Day 4
Breakfast: okra
Lunch: shrimp
Dinner: rice and pumpkin or other roasted veggies
Snack: walnut. sunflower seeds. orange

Menu Plan and Squash

Hallelujah! The restrictive diet now includes 3 pieces of fruit per day. I'm in heaven. I've had peaches, pears, honeycrisp apples (my fav type), bananas, and an orange. Not all today though.

Menu Plan:
Roasted delicata squash mashed with cumin, curry powder, tumeric and sea salt
Broccoli and Tempeh
Mashed cauliflower
Peas and rice
Lentils (Probably in soup)
Pumpkin muffins -- unexpectedly so good!
Mahi mahi
Salad

Menu Plan and Bean Salad

I sat down on Sunday night and made a menu plan for the week. I actually visited a new doctor and she gave me a new diet plan. Little did I know that this would be such an exercise in frustration. When she gave me the new plan, I thought, oh, that's not such a big deal. But as I was planning, I decided that I needed to rely on my tried and true favs rather than searching the whole wide internet for new recipes that met the requirements.

I began going through my blog archive. (Which is exactly the point of keeping a blog, no?)

Yeah, my new dietary plan eliminates almost 3/4 of the recipes on this site.

However, I did find plenty of good food to eat and (as usual) wound up totally overplanning for the week.

Menu Plan
Rice and Peas Risotto -- modifications: no cheese, no stock
Bean Salad
Mashed Cauliflower
Muesili grains
And of course I have tons of greens and veggies to make salads

I made the bean salad last night, so I will go ahead and put that recipe here. I started with a good recipe and made some major modifications. It is still good.

Bean Salad
Adapted from Meghan Telpner

2 1/2 cups frozen green beans
1 can pinto beans, rinsed and drained
1 can adzuki beans, rinsed and drained
3-4 tbs olive oil
Juice from 1 whole lemon
1 tsp oregano
1 tsp basil
1 tsp parsley
salt and pepper to taste

Mix everything together in a large bowl and let it chill overnight.

Menu Plan

I've decided that I need to stop being a slacker. I haven't made a menu plan for a couple of weeks, and I have decided that as a consequence I have been eating junk. Now, yes, I'm like the people on the Intel commercial who say, "Our rockstars aren't like your rockstars." My junk is not like most people's junk. But it still makes me feel a little junky.

So here is the menu plan for the week:
Red cabbage and bok choy stir fry -- Already made and eaten for dinner on Sunday. Leftovers for lunch on Monday.
Lentil Dahl -- Already made. I have four portions, which should get me through lunch on Wednesday.
Red Lentil Lemon Soup
Quinoa Tabouli -- the original version of this pasta salad (although I will probably toss in the olives. Who can resist olives?)
Split Pea Soup -- I will probably tweak this recipe.

I made hummus for a snack yesterday. I was trying a different recipe and it was way too lemon juice-y for me. But it is still a good snack.

Speaking of junk food, have you seen this website? This is why you're fat? My first comment is clearly, I am not getting enough vittles (that's what my dad always says), and second, I am clearly not creative enough.

Menu Plan

Lesson from the menu plan two weeks ago.
1. Enchiladas don't freeze well.

Busy weeks, so I didn't post a menu plan last week. I did pretty well for having no plan though. Mostly because the plan just keeps getting rolled over.

I made my vegetable soup. I made black beans and rice. I ate leftovers. I had people over on Friday and made Chili -- I'll post the recipe for that soon. Yes, yet another chili recipe. I thought it was good. I made pancakes -- quick review the Maple Grove Farms pancake mix is good. My sister came again so we ate at our fav Thai restaurant.

Menu plan for the week
Finish veggie soup leftovers
Finish chili leftovers
Finish black beans and rice leftovers
Spaghetti

I need to think of a portable, non-reheatable lunch for Wednesday. I have an all-day meeting. Other than that it is mostly a clean out the fridge week.
